Where is Cuban Rico?

 

CHELMSFORD -- Paellas, croquetas, empanadas and tapas.

If you're looking for someone to translate these words, then a trip to Café Madrid is in order.

Chelmsford welcomed the eatery over a month ago, and things have been brisk owners Yazmin Badias-Fadjo and Salud Santibanez. Because Badias-Fadjo is of Cuban descent and Santibanez was born in Spain, they've dubbed their ethnic food fusion "Cuba Rican."

Badias-Fadjo is the business savvy half while Santibarez is a master of the kitchen. The pair brainstormed the idea of a Spanish café after their children left the nest, and although the menu is a compilation of the women's favorite foods, Santibarez herself had made a domesticated impression on Badias-Fadjo over the years.

"I don't think my children would have survived without Salud's cooking. I knew her dishes would be a big hit in the café," says Badias-Fadjo.

Those must have been some lucky kids.

Traditional Mediterranean-style meals, like the sought-after paella de Valencia, an assortment of mussels, calamari, shrimp, roasted onions, green and red peppers and garlic, top a mountain of yellow saffron rice for $13.95. Gigantic portions can also be served to accommodate six of your amigos, for $79.95.

Still got an appetite?

Try a non-alcoholic sangria (don't worry, the liquor license, should be coming in November), and prepare for more palate-pleasers. Try Badias-Fadjo's choice sandwich, the Cuban panini, which proved its superiority when the café sold 75 in one day. Roasted pork loin, black forest ham, Swiss cheese, pickle slims and homemade mustard create a taste bud fiesta. All sandwiches are $8.95 and come with Spanish potato salad and a side of bread.

Don't leave without trying flan or Spanish arroz con leche (Latin rice pudding with cinnamon). A pleasant surprise awaits in the cake display, with decadent Godiva cheesecake from the Cheesecake Factory.

It's a cozy space filled with personal family photos, postcards from Spain and portraits of Badias-Fadjo's movie star father and grandfather. And entertainment is on its way. November will hopefully bring flamenco dancers, singers and wine tasting, as the café stays open later for its growing clientele.

"People should come down, if they've never tried Spanish cooking before. It's a friendly atmosphere, and we treat customers like they're a part of the family. And we can help you practice speaking Spanish," says Santibanez. CAFé MADRID
